STORY: Fresh crop Ethiopia season is upon us! The Guji Highland lot was introduced to us via our long-time importing partners, Trabocca, who do an incredible job being our eyes and ears forming relationships throughout Ethiopia. This group of growers is located in the Southern part of Ethiopia, just outside of a town named Shakiso. The coffee is dried slowly on raised beds for a total of 21 days. After the perfectly ripe cherries are methodically turned and dried to a specific moisture content, the seeds are stripped from the fruit and washed clean. The journey then takes our coffee to Shakiso for final dry milling. Here the coffees are bagged, prepped for export, and stored in Trabocca’s warehouse. Coffees from Guji are beautifully unique, especially in comparison to the close neighboring Yirgacheffe region. You can expect slightly less of an in-your-face explosion of berry flavors and more of a complex and nuanced profile. The acidity of Guji Highlands is juicy and absolutely fruit forward. Though it reminds us of berries at times, the flavors are largely a little more exotic – think pineapple, mango, pomegranate, cherries. The body feels full and chocolatey, and there is a distinctly deep sweetness that reminds us of brown sugar and coconut. In fact, Guji Highland is tasting very reminiscent of a piña colada! Just in time for summer.
